If you've made French Toast before, you know what to do from here, just be cautious about how long or how much you soak the gluten free bread in the eggs. This bread does absorb the egg much faster and you may end up needing an extra egg.
For those that want extra direction, you call follow these steps:
Beat eggs in dish big enough to place one piece of bread into
Add cinnamon, vanilla to egg and mix
Heat margarine in frying pan
Dip challah in egg mix (both sides), let excess egg drip off.
Place in frying pan and fry both sides until golden brown or all egg is cooked.
Note: Be sure to only soak as many pieces of challah as you can fit in the pan at a time. The bread will break apart if it has to sit with the egg.
Serve with syrup, favourite topics and some fruit.

We recently visited the Strathcona Market in Edmonton where we were pleasantly surprised by seeing some gluten free products available. We went on some advise from a friend to see if their were any gluten free options, and we did find three booths serving up some gluten free treats.
Here are a couple spots to check out next time you visit:
The first time we purchased this Mayacamas creamy pesto powder mix it didn't make it to our cupboards, because we accidently ripped the packaged on our shopping crate and spilt the package all over our dog. He smelt great! So we bought it again, and it tasted great! We will definetely be sharing our gluten free recipe that we made with this mix.

Saucy Franks is one of my favourite kid's recipes to make, simply because my inner child loves it and it is so easy to make. I think it took me longer to make the salad than it did this recipe. This recipe was adapted to be a gluten free recipe, and I will list what gluten free products you will have to pay attention to.
Serves two adults and one child
2 - 3 Hotdogs
3 tbsp margarine melted in microwave
1/4 cup vinegar
1/4 cup brown sugar
1 cup water
1 cup ketchup
2 tbsp Worscheshire Sauce (*read note below)
1 tsp dry mustard
Your favourite gluten free pasta product
*Note: Be cautious with the brand of Worscheshire sauce. You need to read the ingredients because some do contain malt. We have found that the Lea Perrins brand is NOT gluten free. However, we were delighted to notice that the Heinz brand found at any Wal-Mart in Edmonton was safe. As always, please read the ingredients of non certified gluten free products.
Cut up hotdogs (frozen)
Add all ingredients in large dish including hotdogs
Place in microwave for 5 minutes covered
Serve with pasta or rice

Mayacamas has a line of gluten free products for soups, pasta sauces and skillet toss gourmet sauces. We have have seen this gluten free brand in the Lessard Sobey's in Edmonton's west end.
I am not sure how much of their gluten free line is available at Sobey's or in Edmonton. They do have an online order form, however there is not a Canadian shipping option, so you may have to call in an order.
We have tasted one of their products and were very impressed. We were also pleased that the leftover pasta the next day was not mushy.

Researching products is very important when it comes to finding gluten free products in Edmonton. This is true whether it is for seeking out a gluten free brand, or trying to see if a regular commercial product is gluten free. This is a gluten free tip that should always be kept in mind when researching products.
When you are tracking down ingredient information for a regular commercial product, it is always a good idea to start with the product itself. Product labels provide full ingredient listings and most manufacturers list warnings of the top ten allergies including wheat and gluten. I have found that a lot of manufacturers also will place "may contain traces of wheat products" on their labels if that product is manufactured in the same facility as a wheat product.
In October of 2009, I was researching the Butterfinger chocolate bar and I decided to contact Nestle directly about their labelling. I was seeking information on the ingredient corn flakes. My concern was that they did not list the ingredients of the corn flakes. As a consumer, I thought something like Kellogg's Corn Flakes that does contain wheat. I used Nestle.ca to contact their customer care via phone and also requested an email and hard copy version explaining their labelling policies.
It was explained to me that if an allergen such as gluten or wheat is in a product, it would be listed in the ingredients. Wheat is not labelled on the product, so therefore the corn flakes do not contain wheat. I was happy to learn that Butterfinger's are a gluten free friendly product.
They also explained that ingredients on the actual packaging will trump any ingredient listings on the website. This is a good point to take away because in general if a process or ingredient changes, we should always trust the label of the product in hand, because that label has to list what is in that particular unit. A website could take longer to be updated.

Kinnikinnick's S'morables makes a tasty gluten free snack for the young and old. Biting into a Smores bar with chocolate chips and marshmallow puff (No Name brand available at superstore) definitely takes you back to the day. You can even try mixing it up a little and maybe just add some peanut butter and/or Nutella, with a drizzle of strawberry jam. This product is just as versatile as graham crackers and you can do so much more like make pie crusts or crumble a peace over your cereal.
This gluten free brand has its S'morables on shelves at Wal-Mart Safeways in the Bakery Section, Sobey's and at the Kinnikick Edmonton store. Let me know if you see the S'morables sold at other stores, and I will update this blog!
President's Choice has some great sauces, and some of them are gluten free products. We recently tried the President's Choice Mango Coconut cooking sauce. Although the label does not specify that it is gluten free, we read over the ingredients as an extra precaution. If you try this product, we recommend you read over the label as well so you become familiar with the ingredients and ensure that their recipe has not changed.
The sauce has great flavour but had some kick too it, so be cautious if you do not like spicy foods. It was very easy to make a meal with this Mango Coconut sauce. This is how we made a gluten free meal from this President's Choice sauce:
Serves 2 + leftovers for lunch
President's Choice Mango Coconut Cooking Sauce
2 boneless skinless chicken breasts
1 Cup of frozen peas
1 Fresh Mango
1.5 cups of rice
Cube the chicken breasts
Fry chicken in a tablespoon of vegetable oil in a deep pan.
Meanwhile, start your rice and cube the fresh mango
When chicken is fully cooked through, add bottle of sauce to pan with Mango
Simmer for 5 minutes and add peas
Serve with rice
Add some regular yogurt or cream cheese to cut down the spice if needed.

You can go crazy sometimes just trying to figure out that perfect gluten free product to replace or substitute an ingredient in a recipe. However, there are recipes that naturally do not contain gluten, and these make the perfect gluten free recipes. The Mustard and Brown Sugar Glazed Salmon recipe I am sharing is from The America's Test Kitchen Family Cooking. It is a nice sweet recipe that goes great with potatoes or rice. In our case, we made it with a nice loaded baked potato. As always, we encourage you to review the ingredients of any of the items you use to make this recipe, but for the most part it should be clear sailing.
Mustard Brown Sugar Glazed Salmon
This recipe will work with both skin-on and skinless fillets. Do not substitute salmon steaks. If you have extra glaze, drizzle it over plain or steamed vegetables or pass it around as gravy. Sauce Ingredients:
3 tablespoons cider vinegar (we just used rice vinegar)
3 tablespoons coarse-grain mustard (we used 1.5 table spoons of mustard and 1.5 table spoons of Dijon Mustard)
1 table spoon of vegetable oil
2 minced garlic cloves (you can leave this out if you want)
Whisk 1/4 cup packed light brown sugar, 3 able spoons cider vinegar, 3 tablespoons cider vinegar 3 tablespoons of the coarse-grain mustard, 1 tablespoon of vegetable oil, 2 minced garlic cloves, 1/2 teaspoon salt, and 1/4 teaspoon pepper together until the sugar dissolves.
Adjust oven rack on the upper middle position and heat the oven to 500 degrees. Bring the sauce to a simmer in a small saucepan over medium-high heat. Cook until the mixture is syrupy and measures roughly 1/2 cup, about 4 to 6 minutes.
Meanwhile, remove any pin bones from the salmon. Pat the salmon dry with paper towls, season with salt and pepper, and lay it skin-side down in a lightly oiled 9 by 13 inch baking dish (space fillets about 1 inch apart). Bake for 5 minutes.
Using a pasty brush, spread a thick layer of the sauce over the tops and sides of the salmon. Continue to bake until all but the very centre of the fish has turned from translucent to opaque, about 5 minutes longer.
Brush the fillets with another layer of glaze and sprinkle with fresh dill before serving
Enjoy life is a gluten free brand that has a gluten free product range of breakfast and snack products such as cereals, cookies, snack bars, and trail mixes.
Enjoy Life gluten free products can be found in just about any Edmonton retailer including Superstore, Wal-Mart, Sobey's, Safeway, Save-on-Foods and even Shoppers Drugmart and London Drugs.
We have really enjoyed the Enjoy Life products. Particularly for its breakfast related products. We enjoy their Crunch Flax on top of our cereals, and their Granola mixes on top of our oatmeal. We even keep a stock of their snickerdoodles which is a great ginger bread snack.
A full range of gluten free Enjoy Life products is showcased on their website; however I have not seen all their products on the shelves in Edmonton. Do not be afraid to ask any retailers about ordering some of their other products. Because most retailers already carry Enjoy Life products, it might not be a far stretch to pick up a couple other products if there is enough demand.
If you are looking for gluten free menu items at edmonton restaurants and fast food chains, it takes some work. But it is worth it, knowing that you have options outside of your own gluten free safe kitchen.
The process started for us by scoping out the restaurants we typically ate at. What we found is that not every place is a gluten free friendly restaurant. The start was very frustrating, and we had to find the right questions to ask and start to build a list of 'red flags'.
Pre-scout the restaurant
I have found the most success rate using a restaurants web-site to contact them about gluten free menu items. Typically my email or feedback form has been forwarded to the executive chef or owner that knows more about what gluten. I have a saved emails from edmonton restaurants such as Joey's, Wok Box and Subway Subs to share. I am also finding more restaurant chains posting allergen lists on their web-sites so people with wheat and gluten allergies can determine what is acceptable or not.
If it is your first visit, you will probably have a lot of questions to ask just to confirm your previous findings when doing yoru research. We suggest that your first visit not being during a busy time of day. Be sure to take your time to ensure the server or order taker understands what you are asking about.
Restaurant wait staff may not always be knowledgable about gluten free products, but they do typically have resources. We have found that the larger chains like Kelcey's, Joey's, Cactus Club, The Keg all have allergen lists in the kitchen that the wait staff can consult. Encourage the wait staff to consult then kitchen staff, rather than guessing.

Mothers are marvelous and will do anything for their children. Amanda's mom Nancy is absolutely no different and goes above and beyond to accomodate Amanda's gluten free needs. She scours books for gluten free recipes and is always trying out something new at our weekly Friday night Shabbat dinners.
This week she tried out what was close to a gluten free Challah type bread (picture) that she found in a magazine called Living Without. Living Without is a magazine for people with allergies and food sensitivities.
This gluten free recipe is called Champion Sandwich Bread. The following is cited from the October/November 2009 Edition of the magazine:
Champion Sandwich Bread Makes 2 Loaves
Light in texture, this is the perfect everyday bread for breakfast and sandwiches. This recipe takes only a few minutes to put together in a stand mixer. For maximum yeast rise, have all ingredients at room temperature.
4 cups Brown Rice Flour Blend
1 table spoon xantham gum
1 tablespoon gluten-free egg replacer
2 teaspoon salt
1/2 cup powdered milk or nondairy milk powder substitute
1 package (2 1/4 teaspoons) active dry yeast
3 large eggs
1/4 cup butter, margarine or Spectrum organic shortening
2 teasspoons cider vinegar
1/3 cup honey or agave nectar
2 cups warm water (110 to 115 degrees)
Blend ingredients together. Store in an airtight container in the refrigerator. Allow flour blend to warm to room temperature before using
Grease and flour two 8-inch bread pans
Mix dry ingredients together in a medium size bowl. Set aside.
Place eggs, butter, vinegar and honey in the mixing bowl of a stand mixer. With the paddle attachment, mix ingredients together for about 30 seconds. The butter will be chunky.
Add half the dry ingredients to the wet mixture. Mix just until blended. Add remaining dry ingredients and mix for approximately 30 seconds, until blended.
With the mixer on low speed, slowly add warm water until well absorbed. Turn the mixer to medium-high speed and beat for 4 minutes. Bread dough shoudl resemble cake batter
Spoon the dough into prepared pans. Set aside in a warm place to rise, about 50 to 60 minutes. While dough rises, preheat oven to 375 degrees.
Place pans in preheated oven on middle rack and bake for 50 to 60 minutes or until bread's internal temperature reaches 200 degrees with an instant-read thermometer
Let bread cool in pans for 10 minutes. Then remove loaves from pans and place on rack to cool.

Tip: If you are not eating the whole loaf right away it is okay to freeze the loaf for later use. However we have found it easier to pre-slice the bread before freezing so you can easily take a slice at a time from the freezer.
When it comes to eating gluten free pasta, you basically have two choices, corn pasta or rice pasta. Both pasta's do the same job and as perfect gluten free substitutes for regular flour pasta. However, our first try at these pasta's was kind of a disaster. What we weren't told was that both rice and corn pasta cook differently.
The first time we cooked the corn pasta, it was kind of mushy, and by the time we got to our leftovers, the pasta was all broken apart. We could not figure out what we had done wrong until we took a gluten free cooking course at Allium Foods in Edmonton. We found out that both rice and corn pasta continue to absorb liquid from the sauces and we learned the following tips:
Undercook the pasta (el dante), as the pasta will continue to absorb sauce
Keep the pasta separate from the sauce until serving
In the case of leftovers, keep the sauce separate from the noodles and combine before eating
After following these steps we found a big improvement in the quality of the pasta we were making. We have also decided to settle on using rice pasta as much as possible. In our experiences the corn pasta has ended up a little mushy and has not held up quite as good as leftovers for lunch the next day.

Here is a great gluten free tip, today we visited our local M&M Meat Shops for some dinner ideas. When we asked to view the ingredients of a couple items, we were presented with a binder of all ingredient lists with an allergy chart including gluten free and wheat free items. This made it easy for us to determine what items were Celiac friendly.
You can also easily find the gluten free information online under the M&M Meats products section. Just select the product you want to review and click the link that contains that products allergen information.

This gluten free brand is a specialty food manufacturer that has a line of gluten free products that can be found in select stores in Edmonton. Ian's also has an online store that you can purchase their gluten free products from.
Sometimes you just don't want to cook from scratch and want that meal you can just throw in the oven for thirty minutes and be ready to eat. Our prayers were answered when we saw Ian's Chicken Nuggets. We were really excited to try them, and were not dissapointed. The nuggets tasted great, and better yet, we did not have to batter the nuggets ourselves. We also tried Ian's Turkey Corn Dogs that makes a great late night snack!
Ian's has a great website that you can easily find their gluten free products, or other allergy free products. The site is bright and fun. Ian's is very youth oriented, so if you have children that are Celiac, they may enjoy browsing the site and trying out some of the fun activities available.

It can be discouraging sometimes looking for a snack when you have that salty or sweet craving. Now if your a Celiac, those choices seem to become more limited because what do you usually crave? Cake, crackers or chips are usually at the top of the list. As we all know by know, the gluten free versions of these snacks can be a bit more expensive.
Our gluten free tip today is a list. We have compiled a list of five of our favourite snacks that can be found in the regular aisle at your local store:

NOTE: Always remember to read labels as manufacturers can change processes and ingredients without notification. These tasty cheezies are as good a snack as any to satisfy that salty craving.
Quaker Rice Cakes
Although not all flavours are gluten free, this is a great tasty snack. We love the buttered popcorn flavour for that salty craving and caramel for our sweet tooth.

Although regular chips can be gfree, these are a much healthier alternative that can be found at Costco.
Most yogurts are gluten free, however we have found that the yogurts that are not premixed (fruit sits on the bottom), do contain gluten.

We were surprised to find that there is a selection of IKEA cakes found in their market bistro that are labelled as gluten free. Our favourite is the IKEA Daim Cake.
You can purchase Kinnikinnick gluten free products in Edmonton or online. Kinnikinnick produces their products locally and sells them at their Edmonton store located at 10940-120 Street. Kinnikinnick products can also be found down the organic or gluten free aisles at most grocery stores in Edmonton including Superstore, Wal-Mart Super Centre's, Save-on-Foods, Sobey's, Safeway and Planet Organic.
I am not only proud that Kinnikinnick is Canadian but proudly local to Edmonton. We take great comfort in that many books including The G-free Diet list Kinnikinnick as a top gluten free brand. We have also noticed Kinnikinnick active in the community with a yearly BBQ event at their store and participation in fundraisers like the Festival of Trees ginger bread house competition. Kinnikinnick also has an active Facebook Fan Page and Twitter account (@GF_Insider) where they announce promotions & specials, new products or product updates and gluten free recipes.
Kinnikinnick carries a wide range of products like gluten free mixes, gluten free cookies, gluten free breads, gluten free breakfast items and gluten free cooking & baking products. If you chose too, you could probably supply all your cooking & baking needs from Kinnikinnick alone. One of the advantages of having Kinnikinnick locally is that you can buy fresh gluten free products from their store. Most gluten free bread products are delivered to stores frozen because their are less preservatives in gluten free breads.
We do like the Kinnikinnick brand and appreciate the large number of products they do produce. We have really enjoyed their personal size pizza crust and also their english muffins which can also double for a great hamburger bun.
Today's gluten free recipe is from tonight's dinner. Tonight we made gfree pizza with salad and gluten free breaded mushrooms. One of the issues we struggle with is substitution gluten free ingredients for recipes, especially when it comes to recipes that bread crumbs or flour were involved.
Here is a breaded mushroom recipe without having to use expensive specialized flour mixes:
Small Pack of Mushrooms
1/4 cup Tapioca Starch (Found in the international foods aisle) (A small bag runs for maybe $2)
50 gr pack of Great Value Rice Crackers (Wal-Mart brand - labelled as Gluten Free, but any other rice cracker with no wheat/gluten free would work as well)*
*Note: Wal-Mart has changed their packaging since we purchased this recent pack, and hense may have changed their ingredients. It is always recommended to look at ingredients or allergy warnings when packaging changes to be sure product ingredients have not changed.
Crumble rice crackers into processor, and run processor until rice crackers have crumbled down as far as possible.
I have found when breaking down the crackers, that they do not get nearly as fine as bread crumbs, but they do the job wonderfully!
Pour processed crumbs into one small bowl
Crack and beat egg into second small bowl
Pour tapioca starch into third small bowl
Clean mushrooms and keep them whole
Coat the mushrooms in this order
Fully coat Mushroom in tapioca starch
Generously dip and coat in egg
Generously coat in rice crumbs and shake off excess crumbs
Place on small plate
In fry pan, add vegetable oil and heat
Add coated mushrooms to pan and fry until golden brown.

Friday night is dinner with Amanda's family. Tonight it was decided to take dinner on the road, so we went to Red Robin for hamburgers. We have been to Red Robin several times already, and know that it is a gluten free friendly restaurant choice for a hamburger meal.
Red Robin has a good selection of tasty hamburgers that have no added wheat/bread crumbs as filler. Lettuce wraps can be ordered instead of buns or you can bring in your own gluten free bun. This time Amanda brought a gluten free english muffin (see photo) as a bun from Kinninnick. Their fries are also cooked in its own fryers separate from their onion rings. Just be sure that there is no BBQ sauce, teriyaki sauce or onion strings on your order.
Of course everyone may have their own sensitivity to gluten, but we have found Red Robin quite accomodating. So we have a gluten free tip for when at Red Robin: Always be sure to let the wait staff know you have a wheat allergy, and if possible to have a fresh batch of french fry's, and to use freshly clean utensils to prepare your food. We find they are able to be more accomodating when the location is not as busy. This allows for less opportunity for contamination or mixing up orders.

Although I shouldn't be surprised anymore, I still am surprised when I eat a gluten free meal that tastes normal. Especially when it comes to a breaded or pastry type product.
Today for dinner we had two gluten free products; gluten free perogies and sausage. The perogies are amazing and you can not tell that they are gluten free. They are from Booy's Gluten Free Foods, a Winnipeg, MB based company. Unfortunately they only supply local stores, but fortunately for us, my wife has family there and we have started to request a couple packs when we visit or we have visitors. The sausage is from Grimms Fine Foods and is labeled gluten free. This particular package was a Beef and Pork mix, so it may not be for everyone. However, it tasted great and there was lots of it, and best of all, it was found where the regular meats are at our local Sobey's. We will definately be buying these again!
