Shopping Gluten Free at Freson Bros. in Stoney Plain

We took a trip out to the Freson Bros. Fresh Market in Stoney Plain.  It belongs to the family of IGA grocery stores, but customized to the community.  This location opened in March of 2013, so it is certainly one of the newer grocery stores in the area.  One of the main attractions to this store is the butcher that uses all local Alberta beef and pork products.  Although we didn't pick anything up during our visit, the meats looked amazing.

We had also heard that they have a little bit of gluten free products for the local Celiac community.  Well, a little is an understatement, because there was basically a whole section.  I was really impressed with the amount of selection they had considering that the Freson Bros. location was no Superstore or Wal-Mart in size.  Freson Bros. had everything from gluten free cereals, to frozen gluten free breads, to gluten free crackers and cookies, to gluten free shake'n'bake mixes from Namaste that I have only seen in Winnipeg.  I took some pictures of most of the stuff I saw.  Also notice how they have gluten free labels on the shelves.  We still recommend reading the labels every time, because sometimes product get relocated and through human error, signs forget to move with them.

Also note, they do have a cafe to eat lunch there, but the cafe was not as gluten free friendly as the grocery store itself.

Gluten Free Recipes - From our Readers!

It's Celiac Awareness Month, so how about some reader contributions! Before the start of Celiac Awareness Month, we asked our fans to send in their favourite gluten free recipes. Amanda and I were going to choose four recipes and those fans were going to get free tickets to the Edmonton Health and Wellness Show.  Well, low and behold, the Edmonton Health and Wellness show sent us enough to give out 6 pairs of tickets!  So we were happy to choose more recipes!

Here are some great gluten free recipes submitted by some readers:

Gluten free Sweet & Sour Meatballs Recipe from Cori':

1 1/2 pounds lean ground beef
1 1/2 pounds ground elk
3/4 cups  gluten free quick oats ( I use only oats gluten free oats)
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon gluten free Worcestershire sauce
1/2 cup brown sugar
1/4 cup apple cider vinegar( I use organic GF)
1 teaspoon mustard ( I use organic GF)
1/4 cup gluten free barbecue sauce
1 teaspoon gluten free Worcestershire sauce


  1. For the meatballs: Combine all of the ingredients and mix well. Form into about 24 balls, each about 2 inches in diameter. Place in a casserole dish. Cover with sauce (below). Bake at 350 degrees for about 30 minutes. Serve over rice.
  2. For the sauce: Combine ingredients and blend thoroughly. Heat in a small saucepan until combined and sugar is dissolved and pour over meatballs. (This dish is not overly abundant on sauce so if you enjoy things a bit saucier, double the sauce ingredients.)


  • I usually bake these on a cookie sheet for the first 30 minutes, prepare the sauce on the stovetop as directed, then add everything into the crockpot and place it on low. Stir the sauce periodically to coat the meatballs.
  • I use a small food chopper to finely chop the onions and to make the oats finer too. It makes for a nice consistency.
  • You can omit using elk meat, I just have it available because my husband is a hunter.
  • This recipe was adapted from My Kitchen Cafe, sweet and sour meatballs.

Gluten Free Carrot Muffin Recipe from Tammie

1/4 Cup Pecans
1 1/3 Cups Grated Raw Carrot  (2-3 peeled carrots)
1 Small Apple
1 1/3 Cups Gluten Free All Purpose Flour (I used Cuisine Soleil Organic All Purpose GFree Mix)
3/4 Cup Sugar
1/2 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt
1 tsp Cinnamon
1/2 Cup Coconut (Optional)
2 Large Eggs
1/2 cup Oil
1/2 tsp Pure Vanilla
1/4-1/2 cup Raisins (Optional)


  • Preheat Oven 350
  • Peel finely grate carrots & apple.
  • Wisk Flour, Sugar, Baking Soda, baking Powder, Salt, Cinnamon. Stir in nuts, coconut &raisins.
  • In large bowl whisk together egg, oil and vanilla. Fold wet ingredients, along with grated carrot and apple, into flour mixture. Stir until moistened. Evenly divide into muffin tins.
  • Bake 20-25min
  • Let cool for 30min
  • Makes 12 muffins

My all time favorite gluten free is so easy almost anyone can do it. 
Only 8 super easy steps: 
Red Velvet Cupcakes with Cream cheese Icing.  
  1. Get in your car.
  2. Drive to Crave cupcakes
  3. Go into the store.
  4. Ask the person behind the counter what they have for gluten free. 
  5. Make your choice. 
  6. Let them know what type of icing you want.
  7. Pay for them
  8. Enjoy the best gluten free cupcakes in Edmonton. 
Honey BBQ Meatloaf by Amy

Amy notes that the recipe below is adapted from the link below
1lb ground beef
approx 3/4 cup gluten free rice crumbs (or more to make it firmer) 
(Kinnikick makes gluten free bread crumbs)
2 tbsp  plus 2 tsp ketchup
1 tbsp Dijon mustard
3/4 cup BBQ sauce, divided
2 tbsp honey, divided
1 tsp salt
1 tsp black pepper
  1. In a large bowl, use your hands to mix together the ground beef, rice crumbs, 2 tablespoons ketchup, Dijon mustard, 1/2 cup of the barbecue sauce, 1 tablespoon honey, salt, and black pepper
  2. Shape the mixture into a long, thick log and place a 8x4" loaf pan sprayed with non-stick cooking spray.
  3. In a small bowl, whisk together the remaining 1/4 cup barbecue sauce, 1 tablespoon honey, and 2 teaspoons ketchup. Spread half of this mixture evenly all over the meatloaf. Reserve the other half for serving. (I usually use more than half on the meatloaf before it goes in the oven, because I find that the sauce is a bit too much for afterwards, but it's whatever your preference)
  4. Bake for 45 minutes at 350 degrees F. Slice and drizzle with reserved honey barbecue sauce.
  5. Serves 4-5 people
Spicy Orange Stir-Fry Sauce from Laurel

Stir-fry is a good way to get rid of the lonely vegetables in the fridge. Sometimes there's peanuts, sometimes there's tofu. Once in a while, there's chicken. Things were looking up for this most recent stir-fry as there were sweet peppers, chicken, carrots, broccoli and snap-peas in the fridge. 

3/4 cup orange juice
3 Tbsp. gluten free soy sauce
1 Tbsp. cornstarch
2 tsp. finely grated orange peel
1/2 tsp. minced ginger
1 tsp. sesame oil
Large pinch of dried crushed red pepper, or to taste

Mix all ingredients together, and add to your stirfry half way though cooking it. There will be lots of delicious sauce to soak up so be sure to make some rice on the side.

Borje Salming's Gluten Free Steak Sauce

During the holiday season I got a gift for Chanukah that combined some of my passions, cooking, hockey and the Toronto Maple Leafs.  What did I get?  A grilling cookbook by NHL Hall of Famer Borje Salming and former Toronto Maple Leaf.

His cook book is called Grilling With Salming .  It is nothing too complex, pretty simplistic and a lot of it looks great.  There are some recipes that have ingredients that are not all that readily available, probably because they are ingredients more available at his home in Sweden.

The book has a few sections in it:
  • Marinades
  • Fish and Shellfish
  • Meat and Chicken
  • Salads and Vegetables
  • Skewers
  • Sauces, Dips and Compound Butters
  • Desserts
Most recipes are naturally gluten free.

Anyways, I wanted to share with you the Salming's Steak Sauce on page 104.  I didn't have all teh ingredients, so I made some modifications for mine.  His Steak Sauce recipe essentially takes HP Steak Sauce and enhances it.

  • 1/2 cooking onion chopped
  • 2 tbsp cooking oil
  • 1/2 cup ketchup
  • 1/4 cup HP Sauce (I checked, and the one we bought was gluten free)
  • 1/4 cup Apple cider vinegar
  • 2/3 cup tomato juice
  • 1/4 cup blackcurrant jelly (We only found redcurrant at Superstore)
  • 2 tbsp corn syrup
  • 2 tbsp Worchestershire sauce (The Heinze one does not contain gluten, please check label)
  • 1 tsp liquid smoke (didn't find this, adds a smokey flavour)
  • 1 tsp ground cinnamon
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 2 quarers of 70% dark cocoa chocolate
  1. Saute onions until translucent (not not brown)
  2. Combine rest of ingredients except for chocolate and simmer for about 15 minutes
  3. Chop chocolate roughly and add to sauce stirring until melted
  4. Puree sauce in blender
Top on grilling steak in last 5 minutes to caramelize.

Another gluten free brownie (mix) Yum!

Awhile back there was a big sale, for some unknown reason, at our local Sobeys grocery store. I was in the gluten free aisle on the hunt for one of my favourite gluten free cereals. I love love love Bakery on Main and all of their granola cereals are amazing. Honestly, it can be a bit of a carbohydrate nightmare for me because I just want to keep going back to eat more.

I digress...the point is that I was in the gluten free aisle and noticed that for whatever reason, my Sobeys location had a huge sale on Celimix brand gluten free mixes of all sorts. Believe it or not, I had never ever purchased a Celimix product. No real reason that I can think of, I've certainly seen them in various grocery stores. I just had never bought any I guess.  Of course when you find a gluten free baking mix that is regularly $5.99 and it's on sale for $2.49....well, c'mon who's kidding who have got to buy it and give it a try!

I of course went immediately for the Dutch Chocolate Supreme Brownie Mix, hello it's chocolate! They also had tea biscuits, cookies, pizza dough, chocolate & vanilla cake mixes but who could pass up something with the words chocolate and supreme.

They were beyond easy to make, did not require a bunch of odd ingredients or odd amounts of additional ingredients. Yes I have made a mix that required 1 egg and 2.5 egg whites. It's common, I know, but it sure is less convenient. If I'm making a mix, I'm looking for ease and simplicity but maybe it's just me. Anyway, the brownies were excellent and had a rich chocolatey flavour, which is a must for brownies. The addition of the peanut butter Chipits, certainly was just an added extra level of yum, but was totally not necessary.   My only criticism would have to be that this package makes a cake-like brownie as opposed to a fudgey brownie and I prefer a fudgey brownie, but that's just a personal preference.

Homemade (Gluten Free) Granola Coins

You might think that I  am a magazine junkie, but I promise that my 3 monthly magazines that come just happen to always come in and around the same day that's all! One of the magazines I get each month is Today's Parent magazine. On numerous occasions I have commented that there are some really great tips and recipes in each issue. However this month I found more than just a few, I found a whole bunch of recipes that I wanted to try.

Now on a family related note, I know it might sound silly to some, but even though our little girl is only 9 months old, every time I bake or cook in front of her I always make a point of saying "You know, when you're bigger we are going to do this together". Of course she smiles every time with glee and I like to believe that she fully understands what I am telling her. I do plan to have her bake & cook with us in the kitchen as I personally think it makes meal prep more enjoyable. I can only assume that if she were to participate in the preparation then not only might she be more inclined to try whatever we've made, but also I know that I can keep a closer eye on her while devoting my attention appropriately to my cooking/baking. I'm all about the whole "two birds one stone" idea these days even more than in my pre-baby days. As well, I want to teach her what I know. I want to watch her to ensure she understands the importance of safety not only with the hot surfaces or sharp utensils, but also with regards to avoiding cross contamination and ensuring my dietary safety.

Here's the first recipe I simply had to try from the April 2013 Today's Parent issue:

Homemade (Gluten Free) Granola Coins

(makes 12)
  • 1 Egg
  • 1/4 cup maple syrup
  • 1 tbsp vegetable oil
  • 1 cup large flake (gluten free) oats
  • 2 tbsp pumpkin seeds *
  • 1/4 cup dried cranberries or raisins
  • 1 tbsp sesame seeds 
Preheat oven to 350 F. 

  1. In a medium bowl, whisk together egg, maple syrup and vegetable oil. Stir in oats, pumpkin seeds, dried cranberries or raisins and sesame seeds. 
  2. Generously coat a 12 cup muffin tin with oil. Divide oat mixture into 12 portions, about 1 heaping tbsp per muffin cup.
  3. Bake in centre of preheated oven until lightly golden around edges, 10-12 minutes. 
  4. Carefully run a knife around the edges. Let cool completely.
  5. To maintain their cute shape, it's best to un-mould them as soon as they're cool., after about 5 minutes. Using a spoon, gently scoop and lift each coin out. These will keep well, stored in a single layer in an airtight container for 1- 2 days.
Nutritional info per 1 coin: Calories 79; Protein 2 g; Carbohydrates 21 g; Fat 3 g; Fiber 1 g; Iron 1 mg; Sodium 7 mg.

* I did not fully measure the seeds and I imagine you could put whatever you want into these granola coins, but it will certainly change the nutritional content and possibly baking time as well.

As you can see from the recipe here that this one was particularly easy and as such I ended up making a second batch while the first batch was in the oven. Since I only have one 12 cup muffin tin, I chose to make the second batch using a mini muffin tin. Rest assured, they look and taste just as good, they're just mini!

Have you tried Hunt's Harvest Gluten Free Danish?

A while back we introduced you to Colleen Hunt and Hunt's Harvest's gluten free baked goods.  At that time we had not tried their product, but just wanted to let you know that they are a local baker that bakes gluten free.  Well, I have an update for you because we finally had the chance to sample Colleen's baking, thanks to some samples she dropped off.

Colleen dropped off a bunch of items to try, even though we only asked for one.  After all, we can only eat so much right?  She dropped off a loaf of bread, dinner rolls, and danishes.  I went right for the danishes, because I love my sweets and I had never seen a gluten free danish yet.  Let me tell you as a wheat eater, I couldn't tell the difference.  What a fantastic treat!

Colleen has a home kitchen that she does all of her baking in.  She now keeps her kitchen 100% gluten free as she wanted to reduce any chance of cross contamination.  Because she works out of a home kitchen, she can only sell at farmers markets which she has a couple lined up already for the summer:

Beginning May, 2013, she will be at the Callingwood farmers market on Wednesdays.

Gluten Free at SouthWest Edmonton Farmers Market

Spring time means all the seasonal farmers markets are gearing up for their high season.  On May 15th, the South West Edmonton Farmers Market is kicking off their season with a bunch of gluten free vendors!  That is great to see even more gluten free options available at even more farmers markets across Edmonton.  Here is a list of some of the gluten free friendly vendors that will be at the market:

Gluten Free Cravings Food Fair in Sherwood Park

Edmonton is festival city and May is Celiac Awareness month.  What better time to have a gluten free food tasting festival.  Okay, so technically this is not in Edmonton, but Sherwood Park is close enough.

Spolumbo's Gluten Free Sausages

It's May, so it is Celiac Awareness month!  Time to share some great gluten free info!

Sometimes people make it easy for us to share information.  A sales rep from Spolumbo's sausages located in Calgary, but distribute in Alberta, Saskatchewan and Manitoba emailed me to let us know that their sausages are gluten free.  Spolumbo's has a large list of products, all naturally gluten free, no fillers, no binders.  They even support the gluten free community and were at the Gluten Free Expo in Calgary.  Click here to see their Tweet in support of the expo.

BlueWater Gluten Free Review


May is Celiac Awareness month!  We have some a gluten free product to share with you.

This is a long awaited post as BlueWater was nice enough to send us some coupons to sample their gluten free grilled fish products.  However, you know how it is, life gets in the way!

We actually tried the product in March, and found it very tasty, but haven't had the opportunity to write about it until now.  Not all of their products are gluten free, so be sure to read the packaging before you purchase it.  You can find BlueWaters at most
supermarkets in the frozen foods section.  Look for their nice blue packaging.  The grilled fishes are gluten free and it is indicated on the top right of the package.

The fish was very easy to prepare and took no time at all to prepare our dinner.  We decided to make some roasted potatoes and salad with the fish and felt it went together very well.

So a few house keeping questions that I know you will ask.  First, is "If not all their products are gluten free, how do they avoid cross contamination?".  Well BlueWater has a separate production line for their gluten free grilled fishes.  And knowing my readers, I know you'll ask, "What about gluten free testing?".  BlueWater follows Canadian Inspection Food Agency's guidelines and tests under 20 ppm of gluten.

Gluten Free Healthy Living Exhibit at the 11th Annual Edmonton Health & Wellness Show

Well, this is certainly gearing up to be the best Celiac Awareness Month ever.  I've never seen so many gluten free and Celiac events being organized in May!

Celiac Awareness Month 2013 Starts Today!

Today is the first day of May so that marks the beginning of Celiac Awareness Month.  As board members of the Canadian Celiac Association, Amanda and I are happy to support this month and raise as much awareness as possible.

This year there are several Canadian Celiac Association Edmonton events, and a couple non association events that I wanted to share.  First thing is first, lets help spread the awareness!

What you need to know about Celiac Disease:
Celiac disease is an autoimmune disease in which the immune system no longer recognizes gluten. When gluten is eaten, it sets off an autoimmune response and the absorptive surface of the small intestine (known as villi) is attacked and damaged. Continued deterioration of the villi can have many serious effects, including malabsorption of important nutrients like protein, fat, carbohydrates, vitamins, and minerals, which are necessary for good health. 
It is estimated that 1 out of every 100 people in Canada is affected by celiac disease. Many of them are still waiting to be diagnosed. People of any age, from infancy through old age, can be diagnosed with celiac disease, and you don’t outgrow it.  --
What's going on around Edmonton

Annually, the Celiac Association sets up booths at hospitals around the city to raise awareness and answer questions about Celiac Disease.  If you have any questions, I certainly encourage you to visit the booth during the month to ask them!  I also encourage you to share this information with anyone that is newly diagnosed or consider visiting if you think you have Celiac Disease.  Here is this years booth schedule:
