Gluten Free Greek Salad

This recipe is hard to give up because it is a family recipe, but so simple, so tasty and just happens to be a gluten free recipe.  This makes a simple light meal, or serve as a side for a full dinner.

Ingredients:

1/4 cup vinegar
3/4 cup oil
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp Italian seasoning
1/4 tsp dried oregano
1/4 tsp onion powder
4-5 garlic cloves

Directions:
  1. Add ingredients to dressing container and mix
  2. Prepare lettuce with feta cheese (crumble) olives, tomato onion and cucumber
  3. Add dressing and toss salad
Add shrimp, chicken breast or hard boiled eggs to make for a light meal. For a full meal serve with Our Compliments Lean Chicken Souvlaki (or make your own), with rice.
