Egipcios - A Must Try Moroccan Cookie Recipe

Egipcios are Moroccan cookies that are basically shortbread cookies stuffed with a date mixture.  Egipcios (Egypians) are cookies my Mama would make and serve every Shabbat lunch.  I loved them, along with the peanut butter cookies and chocolate buns should would make.

One of my dads cousins passed on the family recipe to me so I can try to make them gluten free.  Well, lied, I didn't try to make it gluten free, my wonderful mother'n'law tried to make them gluten free.  Actually, she succeeded making them gluten free.

I posted this recipe on my brothers Haggis and Herring blog a while back and I just wanted to share it with everyone.  Check out the "Egipcios - Moroccan Shortbread Cookie with Dates" on the Haggis and Herring blog.  This recipe works with a straight up substitute of Kinnikinnick all purpose gluten free flour when it asks for flour.  Also make sure the baking powder you use gluten free.

Gluten Free Cupcakes from Cakes by Candace

A while back we went to a birthday party for one of our friends kids.  They held at Cafe'o'Play and brought in fruit and cupcakes for the guests.  To my surprise they brought gluten free cupcakes.  Actually I shouldn't be surprised at this point, because I imagine at any party now, there are 2-3 people that require a gluten free diet.

I only noticed while browsing the table that one of the containers was marked gluten free.  I asked my friend Mike where he picked up the gluten free cupcakes from.  He told me it was from Cakes by Candance at 170 St and 69 Ave in the west end of Edmonton.  The same plaza where the Sorrentino's is.

One is missing because I ate it before I took the picture.  I ate the chocolate mint one :-)
The gluten free cupcakes looked good so I tried one and they ended up tasting really good as well.  They were mini cupcakes (same size as the other cupcakes), and were really soft and moist.  They had multiple flavours and not just one flavour.  Because this was a party, I didn't know how much they cost, but certainly a good option for a gluten free cupcakes for those in the west end.

Good Gluten Free Eats at Ceole Envie

We have a returning guest blogger! @erinkbolton had first written for us a guest blog post about gluten free cake pops.  This time she comes to us with a restaurant review abotu Creole Envie, one of Edmonton's hot spots that offers up some great gluten free dishes:

Creole Envie is an amazing restaurant on the east side of Edmonton. I went there with a friend of mine as he is vegetarian and his boss had recommended it for it's vegetarian choices. Upon request they can also provide a vegan menu. When I made the reservation I indicated that I'd need a gluten free menu and they said that wouldn't be a problem. When we got there, the waitress was very excited to tell me that I could order ANYTHING off of the menu and it could be made gluten free. I ordered a fried catfish po' boy and it was DELICIOUS. This restaurant gets their breads made for them and the bun that was used for the po' boy was not only huge, but tasted great and didn't fall to pieces. My friend, who is not experienced in gluten free diets, tried the bread and actually liked it! I was so full but the waitress did say that she had peach cobbler that was gluten free for dessert and I wish I had room to try it!

I highly recommend this restaurant. The staff seem extremely knowledgeable regarding gluten free diets and there are lots of choices. Many things on that menu that I can try that I've never tried before! PLEASE go try it and let me know what you think!

Gluten Free Potato Pizza Crust!

Ya you  heard right, that's gluten free potato pizza crust.

I've wrote this time and time again, Amanda's mother loves being creative and trying new things.  She came across a potato crust pizza from Lidia's Italy blog.  The recipe was not naturally gluten free, because there was flour it, but Nancy just replaced the flour with Kinnikinnick's gluten free all purpose flour and presto! An interesting twist on an everyday recipe.


Here are the ingredients needed for the potato crust:

  • 1 pound russet potatoes
  • 1½ cups all-purpose flour, (Nany used Kinnikinnick all purpose gluten free flour) , plus more for rolling the dough
  • 2 teaspoons baking powder (check that it's gluten free)
  • 2½ teaspoons kosher salt
  • 1 large egg, beaten
  • 2 tablespoons -extra--virgin olive oil , plus more for cookie sheet
  • 12 ounces fresh mozzarella, thinly sliced (Nancy used fresh mozzarella from the Italian Centre and it made a world of difference)
  • 4 cherry or other small tomatoes, thinly sliced
  • 1 teaspoon dried oregano
  • ¼ cup grated Grana Padano or Parmigiano Reggiano
