Kay's Delicatessen in Winnipeg Serves it up Gluten Free!

Recently we were visiting some of my family in Winnipeg, MB and we found ourselves searching for some different gluten free foods to try. Now, I have been to Winnipeg numerous times through out my lifetime, but Abisaac has only now been twice, both times to visit with me.

While we were only in town for a few days and had lots of family gatherings to attend we made sure to stop by two of my favorite gluten free places in Winnipeg. Firstly we stopped for a deli sandwich at Kay's Delicatessen on William Street right near Red River College. I had been there before, but felt the need to show it to Abisaac. They have a large a variety of sandwiches and wraps, smoothies and coffees all of which can be made gluten free.

Though I have no actual factual knowledge regarding Kay's Delicatessen, to me the place looks like it used to be or was based on the old Chinese restaurants I used to go to as a child. The walls and the ceiling are textured in metallic and you place your order at what looks like it was once the hostess position before taking your seat and waiting for your meal to arrive.

I had the gluten free Kay's Reuben sandwich and holy moly was it ever awesome! If you know me at all, you'd know that I often choose seemingly basic or easy to make items off a new menu and base my decision about the restaurants abilities to make good foods on those simple/basic items before venturing into the more complex meal choices. Well, that and the more common menu choices also tend to offer me a better ability to guess the carbohydrate content of whatever it is I am eating, thereby making for smooth(er) diabetes management.

The Reuben sandwich was loaded with great corned beef/pastrami and sauerkraut and topped with swiss cheese....perfect! I did not get a chance to ask the folks at Kay's Delicatessen which gluten free bread they used, but I can tell you that it was excellent and it really held up to the sauce in my sandwich.

The staff are very knowledgable about what gluten free actually means and are able to tell you (with ease) which items can or cannot be made to be gluten free. I always appreciate when someone can easily list off what I can or cannot eat without getting a confused look on their face and leaving me wondering if they will actually be able to accomodate my dietary needs or not.

If you find yourself in Winnipeg anytime soon I highly recommend Kay's Delicatessen for a great gluten free dining experience and many sandwich options.

Gluten Free Cookies from Hardi Foods in Legal, Alberta

I received an email a while back from one of our readers Kim that picked up some gluten free cookie mixes made by Hardi Foods in Legal, Alberta.

I recently purchased 3 containers of this G-free, nut free, peanut free, dairy free and egg free (yes free from all of that!) from a place called Hardi Foods Inc. I cannot tell you how amazing the cookies turned out! My 3yr old son has Celiac Disease, just diagnosed by biopsy this spring and finding a good cookie that is not full of junk is very hard. The best part is I don’t have to mix flours and spend a long time prepping and baking. I strongly suggest you contact their office, purchase some to try and see for yourself!... My son absolutely loved these ones as well. They kind of taste like a peanut butter cookie without the peanuts!!

Gluten Free vegetables and dessert combined...yum!

This summer certainly flew by us. Normally we enjoy the farmers markets in and around Edmonton every weekend, but this summer, with a new baby and our entire lives changing (aka: lack of sleep) we only made it out to a couple of the farmers markets. We went to the downtown farmers market once or twice and enjoyed the fresh fruits and veggies and for the last weekend in August we finally made it out the the St. Albert farmers market (my favorite). I think I prefer the St. Albert market because of the size and the variety of vendors they have there. Plus it's just so spacious and grand.

Last summer at the end of the season (though I think it might have even been in October) I took on a new challenge and I tried my hand at canning. Couldn't tell you what prompted me to try this, but I really enjoyed it. It was hard work and the house was steaming with the many large pots of boiling water going on the stove. Those canned (jarred) goods lasted us until this summer, we may even have some of my beets and roasted vegetables in the cold storage downstairs. I should really go check.

This summer however, my hands have been a little bit preoccupied and as such there likely will be no canning/jarring going on in this house. Talk about a safety issue with a little one who needs your attention, eek.

Anyways, the point of my story here is that the farmers markets are loaded with great locally grown produce and other treats and though I was only able to get out to a few markets this summer I do have one super fantastic recipe to share with you all based on my yellow zucchini purchase.

I have written in the past about this fabulous book, Gluten Free on a Shoestring by author Nicole Hunn. I really like that Nicole uses easy to find "regular" ingredients that you probably have in your kitchen already. In her book she also explains the costs associated with making the recipes yourself instead of buying the item premade. And in keeping with the whole love of farmers markets and locally grown foods this time I found an online recipe by Nicole for Gluten-Free Chocolate Chip Zucchini Bread. What better way is there to enjoy your farmers market fresh vegetables than to mix them with chocolate chips and make them into a dessert (or breakfast)? C'mon don't pretend you do do that as well.

Gluten Free Chocolate Chip Zucchini Bread

Ingredients:

3 cups of high quality all-purpose gluten free flour blend (I used Bob's Red Mill gf flour)
1 tsp xanthan gum
1 tsp kosher salt
1 tsp baking soda
1 tsp baking powder
2 tsp ground cinnamon
1 cup granulated sugar
1 cup packed light brown sugar
2 1/2 cups grated zucchini
2 extra large eggs at room temperature, beaten
1 ripe banana, peeled and mashed
1/2 cup vegetable oil
2 tsp pure vanilla extract
8 ounces semi-sweet chocolate chips
1 tbsp cornstarch

Directions:

  1. Preheat oven to 325 degrees F. Grease 2 standard loaf pans and set aside.
  2. In a large bowl, place flour, xanthan gum, salt, baking soda, baking powder, cinnamon, granulated sugar and brown sugar and whisk combine (working out any lumps in the brown sugar). Set aside the dry ingredients.
  3. In a separate bowl small bowl, place the zucchini, eggs, banana, oil and vanilla, and mix to combine well.
  4. Create a well in the center of the bowl of dry ingredients, and pour in the wet ingredients. Mix to combine. The batter will be very wet. In a separate small bowl, toss the chocolate chips with the cornstarch. Pour the chocolate chips and cornstarch into the batter, and mix until the chips are evenly distributed throughout the batter. Divide the batter evenly between two prepared loaf pans, and smooth the tops with a wet spatula.
  5. Place the loaf pans in the center of the preheated oven, and bake, rotating once, until the tops are golden brown and a toothpick inserted in the center of each loaf comes out clean (about 50 minutes).
  6. Remove from the oven and allow to cool for at least 30 minutes in the loaf pans. Remove from the pans and transfer to a wire rack to cool completely.
  7. Slice and serve. Leftovers should be wrapped tightly in freezer-safe wrap and frozen until ready to use.

Gluten Free Sandwiches now found at Toronto Pearson Airport

Well some good news bad news.  The good news is that we found gluten free sandwiches at Toronto's Pearson International Airport (YYZ).  The bad news is that we didn't buy it because it was $11.99 for the sandwich.  But it is certainly a good option if you were looking for a quick bite to go.

The sandwiches are at basically any sandwich shop within the airport.  We saw them at the Toast cafe and I even saw them at the sandwich area outside of Fionn MacCools.

I am not sure how the sandwich selection works for these, but I only saw a turkey cranberry sandwich.  As you can see by the sign, the gluten free bread is made by Jennifer's Original.  A gluten free bakers local to Toronto.

How to make your own gluten free hamburger patty with no filler

Last month I posted a pic of gluten free hamburgers on Facebook that Amanda for herself. It is not only sometimes difficult to find a hamburger patty with no filler, but sometimes even harder to find a hamburger patty with no filler that you like.

Someone posted a comment on that Facebook post asking if we could post the recipe because like I mentioned above, they can't always find one that they like. The funny thing is, there is not much to this recipe, as it is strictly just beef, seasoned with salt and pepper.  No filler needed!

How did we learn to do this?  Well our good friend (not really) Rachael Ray!  Amanda loves watching her show, and often has really good cooking tips.  She makes her beef burgers with just beef and seasoning. I searched online for a video demonstration to make the gluten free hamburger patty from Rachael Ray Magazine.

So this is essentially what you do:
  1. Get a pound of beef (Lean or Extra Lean).
    • If you are you using extra lean, mix in grated onion to ensure the patty does not get dry. The onion will add both flavor and moisture to the burgers.
  2. Break into 4 quarters (so you get 1/4 pounders)
  3. Lighly (and I mean lightly) pat the meat together and press gently to make a patty (it should be pretty thick)
  4. Place on tray and lightly press your thumb in the middle of the patty.  This helps make sure your patty doesn't expand into a ball.  It also makes sure the middle gets cooked evenly.
  5. Put on the BBQ or a flame or in the over and you are good!

Support, love and gluten free all combined

My apologies if this post seems a bit mixed up and all over the place, but that's how things have been lately for us.

While we were in Toronto a few weeks ago after the unexpected passing of my brother in law Daniel, we were greeted with loads of food, as is customary in the Jewish religion. Without going into a whole cultural lesson here I'll give you the key points to the Jewish mourning customs. The Rabbi who performed the funeral service explained it quite eloquently, I assure you that I will mess up her lovely words in some way, but the gist of it is this...

Though difficult and challenging, in Judaism we surround those who are morning with a supportive community and we do not allow them to hide away in their grief. Instead we support them and provide a communal context of family and friends during their difficult mourning period. We bring food and sit Shiva with those who have lost someone dear to them. We then have rituals that we perform throughout the year that help us through the grieving process. We do not allow mourners to retreat into segregation and disappear into loneliness, even though this may be their initial desire.

During our initial mourning period, people came over to the house bringing us food and showing their support to the entire family. As you can just imagine, this is not the time to be questioning if the foods are gluten free or asking about ingredients being used. At least I didn't feel right about asking those questions.

Now, you might be expecting me to say that I simply ate whatever there was and suffered the consequences (aka stomach troubles) but in fact I did no such thing. Firstly, even though it was a terrible time for everyone and there truly was no way of making it any better, it seemed that the whole family was concerned about what I was going to be able to eat; as if this were something really important. I however, did not share in this concern. I knew that I would manage and that my dietary restrictions need to be a concern for anyone else but me. I'll admit there were a few times when my options were fairly limited, but on the whole I did not care so much. Thank goodness I wear an insulin pump, that's for sure. It certainly made managing my type 1 diabetes a whole lot easier given the odd timing of meals and the uncertainty about what was going to be eaten, but I digress, that's not the point here.

The point is that I/we have some wonderful friends and family. These friends and family were there not only to show their support and unquestionable love for each of us, but also to ensure that I (the pain in the butt that I am) had gluten free options to eat during this difficult time. We are so blessed to have such great friends and to have so many people who love and care about us.

Understandably there are no pictures to share, but I will tell you about a few lovely gluten free meals and sweets that were provided while we were sitting Shiva. A great friend brought me my own gluten free honey cake made by Katz Gluten Free (as it is customary to eat foods sweetened with honey to mark the new year- Rosh Hashana- which fell at the same time as Daniel's passing). We had chicken soup with matzo balls and special for me the matzo balls were prepared separately and everyone's soup serving was made up just for them thereby allowing me to have mine without matzo balls in it. I had my own gluten free Challah to mark the Sabbath and Rosh Hashana also provided by my wonderful friend "RL". Abisaac's friends' mother prepared my favorite butter chicken and green dal which is entirely gluten free. At the request of my sister in law, my parents provided an entire meal of foods from a restaurant called Jerusalem which services Mediterranean foods such as baba ghanoui, hummus, falefel, skewers of meat and many other Mediterranean delights.  This was the first time I was able to have a gluten free falefel from a restaurant.

There were so many other meals provided with love and support during this difficult time, but here is the most important piece of this entire post...

I recall telling Abisaac that there are so many things I will miss about his brother Daniel, but one of the things that I will never ever forget is his ability and truly genuine desire to make everyone feel welcome. From the first time he ever cooked for me, he was always trying to make things that he knew I would like and always ensuring that everything was gluten free and safe for me to eat. He never ever made me feel different or separate from everyone else at the table or anywhere for that matter. Daniel never let me feel left out. He was always so inclusive. Daniel was a wonderful cook, a great brother in law and a loving, kind and caring person. I will miss him very much.

Finally, Pizza 73 Serves up Gluten Free Pizza's!

Yes, it's true!  Pizza 73 is finally serving a gluten free pizza!  This after endless phone calls and a blog post over two years ago begging for support since Pizza 73's sister company Pizza Pizza serves gluten free pizza to Eastern Canada.

So as I've done with other gluten free pizza announcements like Panago gluten free pizza crust announcement, this will essentially give you some details about the pizza and then Amanda and I will offer up review once we try it.

So first off, you can see the following ad on Pizza 73's website.  They are offering 10" gluten free pizza's made from rice flour.  So far they are just offering their peppeoni, hawaiin or veggie pizza's as gluten free.

It was confirmed to me by Amber Fancy, Marketing Manager that they are using the exact same gluten free crust as their sister company Pizza Pizza.

They explained to me it took longer to bring the gluten free pizza crust to Pizza 73 because Pizza Pizza has a different kitchen than Pizza 73.  Pizza Pizza uses ovens and Pizza 73 uses the conveyor belt system.  This meant that Pizza 73 wanted to go through rigorous testing of the pizza to try and reduce the chance of cross contamination as much as possible.  Now keep in mind, like any restaurant, and pizza place, this is not a strictly gluten free kitchen, and I am sure Pizza 73 won't hesitate to remind you that as a fair disclaimer.

With that being said, Amber also wrote to me the following:
Our premade gluten free crust is prepared, cooked and cut with dedicated utensils & doesn’t require dusting flour. However since we are a kitchen environment and many of our products aren’t in sealed packages, we unfortunately can’t guarantee a 100% allergy-free environment.
Amber also provided me with links to order the gluten free pizza's online and to check out the gluten free ingredients.  I checked out the pricing and it is pretty decent:

A Secret Recipe Club Tribute to my brother Daniel Saraga and his Haggis And Herring

On September 14, 2012 I lost my brother Daniel.  He was only 37 years old and he was my inspiration to blogging.  Daniel was the first to blog between the two of us, and he had several different blogs over the years.  The most popular was his blogs was the Haggis and Herring food blog.  I am a Web and Social Media Manager by profession and my brother was always a great resource of information and a good sounding board for bouncing ideas around.  Even after his death I learned a lot more about being part of a community; not only to be successful, but to make an impact and my brother made quite the impact.

My brother was part of a Secret Recipe Club.  He joined this community to get more involved in food blogging.  After all, food was one of his favourite things, so why not take the opportunity to learn more recipes from other great food bloggers, to share with his wife, children and other family and friends.  Each month these food bloggers would make a recipe from another persons' blog and post it.  They would also all link back to all the other bloggers in their group, thus connecting everyone as a community.

Daniel often spoke about the Secret Recipe Club.  My most recent memory of him talking about the Secret Recipe Club was him ranting and raving over some haymishe bagels he made in April that he continued to make several times over.  The recipe originally came from Laura Rees of This is How We Eat.

My sister in law posted her eulogy for Daniel at the Haggis and the Herring and the Secret Recipe Club showed their support.  When they learned of Daniel's passing, that blog post was flooded with support for Meredith and my family from the Secret Recipe Club members and other people from the blogging community.

Another great and supportive action has come from this community, a tribute to my brother Daniel.  Today the Secret Recipe Club is paying tribute to my brother by making recipes off of haggisandherring.com.  I want to thank all 50+ participants involved in this tribute to Daniel for doing this and for all of their support and kindness.  This would really mean a lot to my brother. 

To my regular readers, although not all of these recipes would be gluten free, I encourage you to take a look and see if there is anything you like that you can adapt to be made gluten free and try it out.  My brother always tried to tag all the recipes that were naturally gluten free on his blog as his love and support of me and Amanda was always so clear.
