Chicken with Olives and Peppers

After reading the description of this recipe, we knew it was going to be the perfect dinner to honour my brother. Earlier this month would have been Dan's 42nd birthday. He passed away suddenly in 2012. He is part of the reason why I started Gluten Free Edmonton.

When he passed he left us with a blog full of amazing recipes which we like to pull from to honour his memory. We searched through his Haggis and Herring blog hoping to find this specific recipe which we were not sure existing on his blog.


We only had a memory of an amazing chicken recipe with olives he would make us when we visited him Toronto.  When I read the recipe description, it put us to tears, and we knew it was the recipe we were looking for.
"My Chicken with Olives and Peppers recipe has become a standard for dinner parties and the holidays. I always keep it in my back pocket for occasions when dinner is with a friend or family member who doesn't eat cilantro (one of my favourite flavours for Friday nights)." --Dan
This is exactly when we ate this meal, on a Friday night for shabbat dinner with family and friends.

Dan liked cooking with many flavours, so we knew we were in for a treat.

Ingredients

5 chicken breasts
2 tomatoes, sliced (we used a couple handfuls of cherry tomato)
1 large onion, sliced
1 red pepper, sliced
1 zucchini, sliced
1 yellow pepper, sliced
1 can pitted olives, drained and rinsed
3 cloves garlic, chopped
1/2 cup cilantro or parsley, chopped (we used parlsey)
1 cup chicken stock
1 lemon, sliced
to taste salt and pepper

Instructions
1. Preheat oven to 450-degrees.
2. Place all ingredients in a roasting pan and cook uncovered for an hour.
